ALASKA SALMON CHILE-CITRUS TACO

1 garlic clove, chopped
1 Serrano chile, seeded and chopped
2 Tablespoons olive oil, divided
2 Tablespoons water
2 Tablespoons frozen orange juice concentrate
4 Alaska Salmon fillets (4 to 6 oz. each), fresh, thawed or frozen
Salt and pepper, to taste
8 small (6 to 7-inch) flour tortillas, warmed
2 large, navel oranges, peeled, pithed and segmented
1/2 cup thinly sliced red onion
1 cup fresh cilantro leaves

CRAB TACO

12 to 16 oz. Alaska Crabmeat (from 2 to 3 pounds)
of Alaska King or Dungeness crab)
4 red bell peppers OR 10 to 12 oz. bottled roasted red peppers
1 cup Mexican crema or sour cream
1/2 cup fresh cilantro, chopped
2 teaspoons lime juice
2 cups grated Queso Oaxaca or Monterey Jack cheese
8 small (6 to 7-inch) tortillas, warmed
Favorite hot sauce, if desired

Alaska Scallop AND Cashew Slaw TACO

1-1/4 cup cashews
1/4 red onion, diced
2 garlic cloves, peeled
2 Habanero chiles, diced (with seeds and spines removed)
1/4 cup peanut oil
3 Tablespoons rice wine vinegar
3 Tablespoons water
1-1/4 cup chopped cilantro
1 teaspoon salt
1 teaspoon pepper
1 Tablespoon creme fraiche or sour cream
6 cups Napa cabbage, chopped
16 Alaska Weathervane Scallops
Olive oil
Salt and pepper, to taste
Red pepper flakes, to taste
8 Masa Harina or store-bought corn tortillas
Red leaf lettuce
1 avocado, sliced
Additional crème fraiche and chopped cilantro, for garnish

ROCKFISH TACO

2 lbs of Rockfish
Olive oil and butter
1/4 teaspoon smoked paprika
half of a red cabbacge
1 cup of apple cider vinegar
2 avocados
1 cup of sour cream
2 jalapeno peppers
1/4 cup cilantro, chopped
2 tomatoes
1 1/2 Tbsp lime juice
Salt and pepper, to taste
Optional 1/4 cup pinapple bits

We got some Very Rare Ivory (White) King Salmons are in!

We have been looking for Ivory Salmons for a long time. We just got some really nice Ivory Troll Kings in. These have been non existent for some six months. Amazing and rare! The White King salmon is massively popular in high-end restaurants and kitchens around the world, not only for it's color, but also for the tender and delicate, if not creamy taste. "Ivory Salmon," or "White King Salmon" is identical to Red King Salmon on the outside. It lacks an enzyme that turns the flesh red when eating shellfish, it keeps ivory tint in it's meat. This delicate fish is best pan-seared or baked at low heat and cooks very quickly.

Need a low fat or no-fat meal alternative?
 

Alaska is very famous for its King Crab. It it by far the most important shellfish coming from Alaska.  There are a few different types of King Crab - namely: Red King Crab, Blue King Crab and Golden King Crab. The largest harvests of the main King Crab. The Red King Crab body can be about a foot wide and the leg span some five feet! The largest legs are the front ones (our Jumbo legs are about a pount a leg) and the right claw is larger than the left. Are they right handed? or right clawed?

Dungeness Crab is an important Alaskan Shellfish. It is also found on the Washington and Oregon Coasts and Northern California. The crab is named after the "city" of Dungeness located on the south end of the Straits of Juan de Fuca in the State of Washington. Dungeness Crab Sections are cooked and then frozen, just like the Red King Crab. They are a Gourmet food that can be prepared in siple steps: thaw and warm up some 4 to 6 minutes and they are ready to serve and eat.
