4 Alaska Cod fillets (6 to 8 oz. each), fresh, thawed or frozen
2 Tablespoons Szechwan (hot) chili paste
2 Tablespoons rice wine or dry sherry
1 Tablespoon sesame oil
1 cup green onions, cut in long shreds
2 Tablespoons sesame seeds
Rinse any ice glaze from frozen Alaska Cod under cold water; pat dry with paper towel.
Blend chili paste, wine and sesame oil. Brush mixture onto cod fillets; top with green onions.
Bring 1-inch of water to boil in large pan. Turn off heat and place Chinese bamboo steamer, wire basket or vegetable steamer in pan.
Place cod fillets in the steamer and return water to a boil.
Cover pan loosely and cook for 8 to 10 minutes for frozen cod or 4 to 6 minutes for fresh/thawed fish.
Cook just until fish is opaque throughout.
